Thoughts from the cheap seats out here in the colonies:
I personally prefer a genuine RS - while there are still a small cadre out there that argue my Aussie more door RS is not a "real" RS (get over it guys - Ford Australia saw fit to give them their own unique model number, hard to get more real than that) - she is a matching number factory 4 door RS2000 that still has its original heavy duty shell, original interior and original engine/gearbox/diff. While she has some period performance and styling modifications in both my eyes and those of the law she still classifies as a genuine RS2000. She does spend most of her time these days snuggled up under covers, however she still gets driven just as 'spiritedly' as she did when I first got her 20 odd years ago when the opportunity arises.
In my opinion, for bona-fide competition cars with service bodies, etc prevailing in the era, the log book coupled with an iron clad providence obviously has to rule.
Again, in my opinion, for non competition cars if the shell did not leave the factory with the RS tags it is simply not a genuine RS. Reshelling cars is illegal out here in the colonies and for good reason (as commented earlier).
