Depends what you want it for?
200TDi is simpler and has less to go wronge, i run my 200 on cooking oil, diesel and sometimes old engine oil, never misses a beat, just smokes occasionly
The 300 is deffo more refined and the TD5 even more so but the later you get the more the electrickery comes into it and the more it goes wrong'
TBH even an early 200TDi will feel refined compared to an old ford but in the great old tradition of all Fords they love to rust, especialy the boot floor and strengthening ribs under it, inner sills and basicly anywhere that ally panels and steel ones meet
They do handle like a jelly on a plate susspended by very weak elastic to a bendy metal rod all held up by a ****ed bloke at midnight outside a kebab shop
