I've noticed that one before, that episode was recorded in the hot summer of 1983 during that scene with the RS it looks to be very hot. I'm sure there is a Minder episode with a red MKII RS2000 in the background. The episode 'The Beer Hunter' from series 2 has a white MKII Linnet in the background this episode was from 1980 so it must have been brand new at the time.

To answer my own question, by chance I watched the episode afew days ago and there is indeed a red MKII RS2000 featured as a background car it's in the episode 'What Makes Shamy Run?' from series 5. As Terry, Arthur and Shamy leave the pub it can be seen parked behind them (can't see the no. plate).

Ah yes I forgot about the Mexico in that episode. The Datsun Bluebird estate next to it appeared in various Minder episodes so was probably a crew car. I guess the guy who's with the Mex was in on it somehow as he's right in shot and not taking any notice of the filming or argument.

The Mexico was last on the road in 1994.
