Dubai is one of my regular destinations for work. The Mrs will love it as plenty shopping. Get yourself over to Abu Dhabi (approx 2 or so hours by car) for the motorsport thing. 4WD driving in the sandy outback isn't too bad, also scuba diving and skiing if you have time. Oh and the metro is easy and cheap to use
