Yeah, I've chucked out a few Transit towing eyes when fitting Tow bar kits, they weigh a bloody ton though, as you say fine if you don't have cart springs anymore.
Mind you another option being when I was working for Jaguar we had boxes full of transport towing eyes (Mondeo ones) that had a screw thread (LH) on them. If you modded one of those to fit and welded one of those to a chassis rail that would work well enough but again possible spring issues and can't say if you'd clear the back panel.

It's possible to do it with various bits of angle iron - two bolted vertically through the chassis rail between the spring hanger and back panel and up against the back panel then with a U bolt welded to another bit on the outside and bolts passing through the back panel to hold all the bits together. It lies below the bumper when that's fitted. It's possible to use a more "professional" strip/bar, with ring welded at one end and passing through the rear panel and then welded to the rail at the same place, but the spring hanger etc probably needs to be removed to weld it to the rail properly. Neither complies with the current wording of MSA regs but are routinely accepted at present.Attached Files

I work with a team in the World Touring Car Championship and all cars are fitted with fabric towing straps front and rear made from the same sort of material as seat belt harnesses or ratchet straps. This stops people using solid protruding towing eyes which if you nudged the car infront you are likely to have their rear tow eye go through your radiator.
I used this idea on the rear of a MK 2 Rally car i look after by simply welding 2 threaded bosses into the chassis rail, making a loop out of a peice of ratchet strap & bolting it to the chassis with a spreader plate.
On the front i use a metal eye bolted to each side of the front sump guard mount.
